My aunt runs a nail salon. What should they do when costumer refuses to pay for a service and walks out?

Depends on if you are asking legal recourse, or business advice.
Legal recourse is small claims.
Business advice is, it is not worth having someone badmouthing the business over 50$. Tell your aunt to only work on a pre-pay basis.
