If i buy a piece of furniture "as is" floor model, is
the store obligated to deliver that exact piece to me,
or can they substitute another "as is" in it's plac

If they are substituting another piece in place of your "as is" display piece it is NOT permissible unless you agree. Otherwise, you are simply not getting what you bargained for. Depending on the store and whether they make a habit of this "bait and switch" type of deal they could face some criminal penalty for unfair and deceptive trade practices.
