Is it true that a person has up to 3 business days to ''back out'' of a contract such as with a gym or other package?

Generally, yes, but it depends on where you bought it. The California Dept of Consumer Affairs has a lot of information about gym memberships. You should read it.

Read The Contract. If there is a legal cooling off period for gyms I don't know of one. Hint: Whatever the sales rep told you means nothing.
