Can I be held responsible for credit cards and accounts that my wife set up without my knowlege or consent?

It depends. Whose name were the credit cards in? If they were in both names, they can probably make a decent argument that you are responsible. If she used them to pay for the necessities of life, then they can probably come after you as well. Otherwise, probably not. More facts would be needed to give you a better answer.
