my husband received a deposition of subpoena for production of business records, but he wants to object to the records being released can we legally do so?

Objecting to release of records is possible, but you would need a specific legal reason to objection. In California, a party to a lawsuit may seek any information that is either relevant to the pending lawsuit or "reasonably calculated to lead to the discovery of admissible evidence". That is a pretty broad standard and while it often results in useless fishing expeditions, judges are reluctant to block a party from seeking information.
