Legal Question in Credit and Debt Law in California

If I'm a mechanic and I've repaired a car for someone and they haven't paid me, how many days do I need to give the owner of the car when I send him a "notice and demand" letter?

In San Diego is it 30 days or 60 days or 90 days/

Well now I know a little better what you are talking about, but still have no idea what "notice and demand" letter you would be talking about. Notice and demand for what? Presumably demand for payment, but notice of what?
