Do you need to send copies of your evidence with your response to summons form or do you save it for the court?

Unless it is a small claims case, never attempt to respond to a summons by yourself, contact an attorney. And no, do not send or file your evidence with the court. If you have a valid defense to.a collection case you will likely get your attorney fees back at the end of the case, so why wouldn't you use an attorney.
