You must file a responsive pleading -- i.e. an answer, demurrer, motion to strike -- within 30 days of service of the summons upon you, and not from the date stamped by the court on the summons and complaint.

You can find a fillable answer form at http://www.courtinfo.ca.gov/forms/fillable/pldc010.pdf . However, the court does not give you advice on what to fill in, including affirmative defenses which are very important to plead.
