if a creditor has already served me will filing a homestead now stop them from taking my home

What will stop them is filing a timely answer to the lawsuit. More facts are needed, of course. Perhaps you have a defense such as the running of the statute of limitation. If you're concerned about your home, then the debt must be a large one. It's worth the cost to consult with an attorney.
