i had a verbal agreement that a county office would be paying for my daycare fees. the women never filled out her paperwork and is now sueing me for way over what we agreed on. what are my chances in court? i have very little evidence and so should she.

Its impossible to say what your chances are without reviewing all of the facts, but I think your last sentence pretty well sums it up - you have very little evidence. To the contrary, your opponent has the ability (I assume) to prove that she provided the care services you agreed to, and even though you dispute the amounts, it is more likely than not that she will prevail to some degree.
