how to write a demand letter to an escrow company for my judgement against the broker who has an escrow held in their office and will be receiving a commission and demand they pay their commission to me?

You don't do it by letter. You must follow the procedures for executing your judgment. That will involve getting a writ of execution and a levy on the escrow.
