Legal Question in Criminal Law in California

i was arrested for starting a fire which i have not done. the officer arrested me and i said that i did it because of over-stress. can i take it back somehow?

You will probably not be able to keep the statement out of evidence. That's very bad news for you. It's a good example of why people who are under suspicion should never talk to the police.

You can try to explain the statement away, but your explanation will have to be awfully good in order to persuade anyone that your initial confession was false.
