I was fired bacause of emblezzekment and was wondering what kind of thime frame does my ex employer have to press charges?

You should hire an attorney immediately. They have one year to prosecute for misdameanors and typically 3 years for felony charges

Technically, they can have all the time in the world. Practically speaking, however, if they do not press within a month or two it is unlikely they will at all. The longer they wait the less credibility they will have.
