how could or would a person be prosecuted for disassembling the personal property of a significant other, without causing any actual damage to the property?

I can't think of the specific charge off the top of my head, but it would probably be some sort of criminal interference with property. If the significant other is a spouse, I doubt any criminal charges would be filed because the property would probably be community property. Depending the type of property and the extent the property was disassembled would also come into play. The prosecution, or even the police, may consider it a civil matter.
