Can a person waiting to be arrested by the sheriffs office find out when they are going to be arrested?

She's free to ask, but she isn't entitled to the answer, assuming that the sheriff has even decided whether or when to arrest her. Many defendants would use such information to evade arrest, and requiring law enforcement to provide it would serve no useful purpose. The sheriff might choose to tell her anyway if he doesn't think she will try to evade the arrest. The potential arrestee also has the option to surrender; the sheriff will likely cooperate in scheduling a surrender if he believes she will follow through.
