Can a judge vacate a jury verdict of not guilty?

No. A jury's acquittal is the final word, and cannot be undone by the trial court or on appeal. The one exception -- and it is *extremely* rare -- is where the defendant bribed, threatened, or otherwise tampered with the jury.
