Can someone who is announced Pro Se appoint an attorney after the trial date has already been set?

Yes. Although the further along the case goes the harder it will be to find one who will take the case.

Yes. A person has a right to an attorney, of their choosing, at any time, even before they are executed by lethal injection. They also have the right to fire that attorney, at any time.
