my custody orders for my son say his father has visitation every other weekend from 5pm friday to return to school monday. What if the school is closed due to holiday or even during the summer time?

The father should return his son as if school was in session, unless there is some other provision in the order. Usually, holidays and other days off are accounted for in the parenting plan.

The most sensible approach would be to stipulate with the other parent that when there's no school that the child will be returned to the other parent.
