Is there a mandatory waiting time between the divorce and getting remarried in the state of California?

You cannot get remarried until the judge actually signs and enters a judgment that terminates the status of your marriage. I saw a statement of this the other day in Spanish, and will have to incorporate that in my future responses to similar questions. Loosely translated, it means that you are not divorced when you file the papers, you are divorced once the judge dissolves your marriage. Once the judgment has been entered, by the judge, terminating your status, you can remarry another person, or the same person.
