Legal Question in Family Law in California

if I were to marry my boyfriend in the state of California (we are both non-residents), would we both become residents of California?

No, not any more than if you get married in Paris, or Reno, or underwater on the Great Barrier Reef. You would need a California marriage license, though, and to comply with Californa law about who can conduct marriages, etc., but that does not make you a resident anymore than a honeymoon trip to Disneyland would.

No. You only become a resident of a state when you physically move there with the intent to remain there indefinitely.
