What protection and/or rights do "cohabitation" partners have in the event of the one of the partner's death?

None, unless they register as domestic partners, or go see an estate planning lawyer and get several documents drafted up that will give each other rights.

There are no rights under the family law code. However, you will have rights if you jointly hold property or are included in the other person's will. You will probably want to consult with an estate planning attorney.
