In the state of California, at what age can my son say and not be forced to go visit his father for the summer?

Or if the mother makes a motion to modify custody and the child is 14, he can tell the judge and the judge may decide not to force him. Unless the custody order is modified by agreement or a judge, however, you face contempt of court charges and possible criminal prosecution if you do not follow the existing order.
