If I have submitted 2 subpoenas to my ex-spouse's company for pay records and they have not complied. What is my recourse at my next court date?

Call the company and see what gives, why aren't they complying? Subpoenaes are not simple things and if you didn't follow all the rules, the subpoena is meaningless. If you did it correctly and they aren't complying, file a motion to compel with the court. You have to get the court to enforce it and impose appropriate penalties upon them.
