Legal Question in Civil Litigation in California
I cancelled my wedding back in June, plenty of time to cancel the ceremony. my ex-fiance took the trip to Europe anyway and sent me an email stating I have an airline credit and to use it to go somewhere nice. Today I received an email from my ex-fiance demanding $4k by Oct 20 or he will take me to court for $7500 plus fees. Is this a form of extortion?

You do not provide enough information, but it is not extortion to demand from someone money you believe they owe you and threaten to take you to court for more money if you do not pay the lesser amount. Extortion requires a threat to report you to the police for a crime if you do not pay a civil wrong to them, or that they will do something that on its face is illegal, such as physically harm you.
It's not extortion for someone to demand money they think you owe them and threaten to sue you if you don't pay.
