employment

If i worked for a person who owned his own business and sold his product inside a theme park basically he is a concession stand he pays the park a percentage of his daily gross for rent. My question is am I an employee of the theme park or the person who owns the concession stand?

For purposes of who is responsible for paying your wages, you would ordinarily be an employee of the person who owns the concession stand. He hired you and presumably your contract of employment is with him alone.

For purposes of liability for your actions as an employee acting in the course and scope of your duties of employment which might cause injury to a park patron, the concession stand owner would be primarily liable. The theme park owner might also be held liable for such injury, if the work you were doing involved a peculiar risk of harm which the law considers cannot be delegated to an independent contractor (the concession stand owner).
