Legal Question in Civil Litigation in California

We have a horse boarding ranch in which a women brought out two horses, filled out the contact info paper work and said she would return later with payment. She did not come back and for a week she made excuses why she hadn't yet paid and would come out later in the day, etc, to pay. She has not and now is not returning phone calls and after weeks of leaving messages. What options do we have as far placing a lien, etc.
