Serving papers
If I served papers to a person, can they ask me to sign an affidavit ''against'' the person I served the papers for?

They can ask, but you don't have to sign their affidavit if you don't want to. If you refuse and if the subject is important enough to them, they may subpoena you and force you to testify in a deposition and/or in court.

They can ask, but that does mean you are legally compelled to comply with the request. If you do not cooperate, they do have the option of issuing a subpoena for you to attend a court hearing and/or a deposition to obtain your live testimony.
