Why not get married first in India, then do a consular processing in India? That way, you can have the traditional wedding. (I don't think the processing of the K visa, then permanent residency once in the U.S. is any different in terms of time.)

If you get married in India you cannot bring your wife as a fiance then. You will have to apply for a K3 Visa (Spousal Visa for a wife or husband of a US Citizen). The processing and waiting time is pretty much the same as for a K1 Fiance Visa.
