Legal Question in Immigration Law in California
PERM application
With regards to the Work Experience Letters, if I have 2 previous jobs, do I need to obtain a letter from my previous companies? What if it's not possible to get one from them as the individuals I worked with have already left the company? Is a letter from my present company sufficient to prove my years of experiences?
Appreciate any professional advice.

You should get letters but whether to submit them is legal question, you should use an attorney if in California contact us.
Re: PERM application
It would be better to get letters from not just your present employer in order to verify your claimed experience. At least get a letter from the previous company where the individuals you worked with are still there. Even with the problematic company, surely the HR Dept has a record of your employment, and you could get some manager to describe what you did in a general sense.

The only time you could use letter from your labor certification employer would be if the future job is at least 50% different from your prior and/or current job. Only then can experience with the employer count toward experience required to meet labor certification requirements in meeting the I-140 requirements. The I-140 must have evidence of prior experience, before the labor cert employer (except for the 50% rule) if experience is required in the labor certification. If you are having difficulty coming up with how to prove that, I can creatively come up with sources that objectively document and verify your experience.
I have many years doing the highest caliber labor certification cases in Los Angeles, exclusively handling them for two of the city's most prominent lawyers. Now, I too have similar reputation and much success in these matters.
