Legal Question in Juvenile Dependency in California

When do I technically become an adult?

I want to move out of my house very much. My parents will not allow it until they are no longer responsible for me. I know that is when I turn 18 here in Cali, however I am wondering if it is the day I turn 18 or the next day. I'm sorry if this sounds stupid...but I need to know...if I were to turn 18 tomorrow and left at midnight tonight (just an example...not really gonna happen) is that legal if people know where I am going? Or do I have to wait until its turned to the day after my 18th bday??
