Can you be diciplined by your employer for talking about other coworkers outside of work at an event that was not sponsored by them?

If it is true and not slanderous then no, in most cases you can't be disciplined (Freedom of Speech). Same goes for a recent case that set precedent for talking about Union related issues (if you are in a Union). The key here is the same for any person you talk about: it just can't be a lie or a slanderous accusation. That could call for disciplinary action.
