we have a employee that we think is drinking on the job and might have a drinking problem. What recourse to we have?

It will depend on a lot more information. Is he an at will or contract employee? How long has he been on the job? What is his work history? Has he filed any claims or made any complaints recently? Is he part of a group that is protected from discrimination? Generally, anyone can be terminated. There can be liability if the termination was for an improper reason.
