What is a good form to use when you hire someone to perform work on my property that would release me of liability of the hired party or his employee to sue me if they are injured on my property while working on it?

If you hire an unlicensed contractor, he is your employee and any injury to him or his employees will subject you to liability for workers comp. and general liability. Ask to see the license and proof of workers comp and liability insurance. Make sure that your own insurance will cover you for any injury, including workers comp coverage. This is often included in home owners policies, it may not be a part of a business policy.
