Employers are not required to provide food and water but they are required to allow employees to take a 30 minute meal break for every 5 hours worked, so you may leave the work site to eat, drink and rest. If your employer is not permitting you to do this (and many security companies are notorious for this), they are violating the law.

You can file a complaint with the California Labor Commissioner or see an employment law attorney in your area, for help.
