Should i sign an agreement from my Employer for not paying for breaks

It depends on what you are getting in return. Salaried workers get pain a lump sum no matter what breaks they take; they just have to get the job done--efficiently.

Maybe it is "good" that you are on your way to be such a needed worker. On the other hand, either obtain counsel or read up on the matter diligently.
