Is it legal for an employer to inaccurately change the hours and/or days that an employee worked without notifying or discussing it with the employee?

Employers are required to pay hourly employees for all hours worked. So if the change you refer to results in not being paid for time worked, then no, it is not legal.

It is never legal for an employer to change time sheets to reflect less hours than actually worked. Employers are required to pay for all hours worked by the employee, regardless of whether the employee worked more hours than he/she was scheduled, requested or should have.
Is your employer changing the time sheets of all employees or just yours? You and your fellow employees may be owned wages for the hours worked and not paid.
