Unpaid earned bonus

My wife and I were motel managers for a multi state motel company. As one incentive to make each property produce more revenue, the managers were put on a bonus system of earning a 5% commission on all sales over par which was $75,000. The employer based this on monthly revenues, from the 1st to the last day of the month, but did not pay until the 21st of the following month. We were terminated without notice and the company refused to pay our bonus's earned. Is this not unfair enrichment to the employer? What options or sections of law should I refer to? Thank You
