Vacation Compensation Exception

Our company currently has a vacation policy that states that employees receive 5 days vacation for the first year, 10 days for the 2nd through 4th years, etc. We are looking to hire a new employee who is requesting 15 days per year starting immediately. This goes against our written policy. Is it legal to make an exception to our written policy for a new employee?
