will a non compete hold up in california if signed by an employee??

They are disfavored, but a well drafted one that takes into account California law on what is and is not permitted to be limited will certainly hold up.

Generally, non-compete agreements are not enforceable in California, as the violate California Business and Professions Code section 16600, and are against public policy. There are limited exceptions.
