i am being evicited, what should i do if my landlord signed and dated the proof of service by mail when i got a UD-150 in the mail?

The landlord's signing a proof of service for a Request to Set Case For Trial is not grounds to invalidate the request. You can attempt to raise that as an objection before the trial starts, but you are going to find that most landlord tenant judges will not vacate a trial date based on a technical issue such as a party serving a non-determinative pleading.
