I just received my eviction papers. Today is Saturday the papers were sent on Friday by regular mail. When does my 5 days start to respond?

More than likely they'll claim that they personally served an adult in your household on Friday. Thus, you will have to file an answer or other responsive pleading by Wednesday, 3/25.

By the way, the courts have fee waiver programs for people who can't afford the court filing fee. Many courts also have eviction clinics, whose volunteers could help you fill out the paperwork.
