if a landlord takes you to trial for unlawful detainer then ask the court to dismiss without prejiduce, does the tennant have to pay back rent for the months they were waiting to go to court?Is it against the law for a landlord to pay witnesses money for their testimonie?

Witnesses are entitled to the standard witness fee [about $40]; the can be paid more but the other side can question them as to how much they were paid.
I need more information as to your other question. If you settled the matter then the landlord is entitled to what the settlement states. If you had already vacated the premises so the landlord was not seeking return of the premises, the landlord can still seek whatever rent you owe but must try to mitigate damages by renting the unit out as soon as is reasonable.
