what if the landlord only told us of one death in the apt we rented, then we find out from neighbors there were two deaths. Also, the carpet was not replaced after the death of the prior tenant who died about 6 weeks before we moved in

While not telling prospective tenants of a death might be the basis of finding significant enough deception to make the contract voidable, because some people are leery about renting a place where there has been a death, few people would be effected who would accept one but not two deaths. There might not be any reason to remove the carpet; that depends upon what the cause of death was.
