I have a roommate living with my boyfriend and I that, unfortunately, I never made an actual written contract with. I've given her a 30 day notice and plan on giving her a 3-day pay or quit on the 11th. However, I'm fairly confident that she won't be gone after then 3 or 30 days. What's my next step?

I assume you're the one on the lease. If she doesn't pay by the end of the day on the 14th, then you would file and serve an unlawful detainer action in the local superior court. If she doesn't file and serve an answer within 5 days thereafter, you can apply to the court for a default judgment of possession.
