Legal Question in Landlord & Tenant Law in California

I was served a 30 day notice by a man who claims he is the property manager for my landlord. I informed him I am entitles to 60 days since I have resided there for 2 years. But, the "manager" is nowhere listed on my lease, not as a listing agent or leasing agent to the landlord. In fact those fields are filled in with "n/a" does he have to be on the agreement in order to serve me the notice?

No, a management agreement could have been signed after you became a tenant. Nevertheless, if you are sued, you might have a perfect defense of improper notice to quit if you can show that you've lived there more than one year. If there is a lawsuit, you can demand to see the management agreement if the management company is the plaintiff.
