How do I STOP or DELAY a 5 Day NOTICE TO VACATE from the County of Los Angeles SHERIFF'S DEPARTMENT Court Services Division?!

You would have to reach some agreement with your landlord or lender. The Sheriff has no discretion in the eviction so you can no go after him. The court is very unlikely to grant a stay unless you could show some major emergency, etc.

If you are just trying to delay the lock out for no reason, the only way is to, as Mr. Shers said, reach an agreement with your landlord.
However, if you have some valid reason the eviction should not go forward, you can petition the court for a stay. Without knowing more, there is no way to further answer your question.
