Does your employer have the right to sign a document that binds you to a legal contract with an outside vendor without your permission?

This is not a Legal Ethics and Professional Responsibility question. Legal Ethics refers to the ethics of the legal profession, and the rules of professional responsiblity that govern lawyer conduct, licensing and discipline by the various state bar agencies. To answer your question, however, no, you cannot be bound to a contract you do not consent to unless you give someone a power of attorney or make them your agent to enter into contracts. An employer can, however, enter into their own contracts with third parties for your benefit, and in that case the employer and the third party control the terms of the contract and you are bound by them if you want the benefit of the contract. Health insurance is the prime example of that.
