Legal Question in Personal Injury in California

I am a party promoter, and we essentially throw dance parties at a local concert hall, which we rent for the night.

We have a $2 million insurance policy that covers the event.

My question is, how much liability am I incurring (keep in mind I have an insurance policy for each event)? I am wondering specifically about either a fight or if someone gets hurt.

(Also, we are not an LLC or a legal company yet)

You are incurring any liability for negligence or a hazardous condition (including inadequate security) that results in damages over $2 million. Damages up to $2 million are your insurance carrier's problems. Although you would not have insurance coverage for intentional wrongful acts by you or your staff. So, for example, if you hire thugs and they pick a fight with someone and they hurt them, you may not be covered. So choose your personnel as if you have no insurance. ;)
