Does a person who tries to help an injured animal and then gets bitten then gets sick, have a valid claim against the owner of the animal?

Maybe. It would depend upon the circumstances. You haven't provided enough information.

The defendant would only be liable for the illness if the plaintiff could prove it was caused by the bite. (Becoming ill after being bitten does not prove that the bite caused the illness.) Liability for the injury itself would not require such proof, but it would still depend on precisely what happened.
