Can I delay closing escrow until "walk through" defects are repaired on a new construction home in California? The salespeople say I can't because the date of closing of escrow is binding in the contract to purchase that we signed.

The salespeople are correct that CoE is a binding contract term. However, that is not the end of the story. There are sometimes grounds to delay close, but it depends on the terms of the contract. Without reviewing the contract there is no way to say if you have an "out."
